Here is how you make Mock Summer Squash Casserole:

Saute onions and bell pepper in butter until onions are golden brown. Add in squash. Continue to sautee until squash has browned somewhat. Remove from heat. In another pan, cook sausage (use Pam cooking spray) and when done, remove skin and dice sausage. In large bowl, mix sour cream with 3/4 cup of cheese. Stir well. Add in sauteed vegetables, sausage, and crumbled corn muffins with cream mixture. Mix well. Spray baking dish with Pam cooking spray and pour ingredients into pan. Bake in 350 degree oven for 30 minutes (covered). Sprinkle with rest of cheese and bake an additional 15 minutes uncovered.
