1/2 c chopped yellow onion
2 cloves minced fresh garlic
1 c low sodium chicken broth
1/2 c 1% cottage cheese
4 Azteca ultagrain tortillas
1.5 c cheddar cheese
.5 c mozarella cheese
1/2 c real bacon bits
salt and pepper to taste

Here is how you make Tortilla Peirogi Casserole:

Peel, dice and boil potatoes 15 min or til tender. Drain. Saute onion and garlic in 1/8 c chicken broth over med low heat til tender. Add potatoes and cottage cheese. Use hand mixer to mash. Add all cheese reserving 1/2 c of the cheddar. Mix again. Put 1/8 c chicken broth in bottom of round casserole dish prepared with non stick spray. Add a tortilla and a layer of potatoes. Sprinkle with some bacon. Add another tortilla and a splash of chicken broth. Continue layers and top with reserved cheddar.
