Here is how you make Cauliflower Shells:

Use a box grater, ricer or grate in your food processor / blender to grate the cauliflower so it?fs slightly finer than the size of white rice. Place the cauliflower in a microwave safe bowl, and cover, then microwave for about 4 minutes on high stirring once. Let the cauliflower cool for a few minutes until it can be handled safely and then squeeze it to remove as much water as you possibly can using the ricer or cheesecloth.Throw the cauliflower into a bowl, along with egg and any other seasonings you prefer. Mix until well-combined. Batter will be a little bit runny but shouldn?ft be pure liquid. Stove Top:Add cooking spray to an 8?? skillet set over medium heat. Drop about 1/2 cup of the cauliflower mixture and spread it all the way to the edge with a spatula.Cook for 2-3 minutes or until the top looks set and the underside is nice and golden. Flip the shell and continue cooking for about another minute, until it?fs completely set, then transfer to a plate while you cook the remaining 3. Repeat until out of mixture.Oven:Preheat oven to 375 degrees and cover a baking sheet with parchment paper. Then spread mixture into 4 fairly flat 8" circles.Place in the oven for 10 minutes then carefully peel them off the parchment and flip them and place back in the oven for 5-7 more minutes.Once they?fre done place them on a wire rack to cool slightly.Heat an 8?? skillet over medium heat and place the shells into the pan, one at a time, pressing down slightly and browning them on both sides to your liking.
