Here is how you make Easter cheese (a healthy hrutka):

Combine eggs and milk. Add Splenda, vanilla and salt. Stir. Cook over a double boiler (though I use a large pot inside of a soup pot). Stir occasionally, making sure to scrape the bottom of the pot. Cook until mixture curdles. You must cook the mixture long enough so that the milk separates from the eggs. The eggs should look like well done scrambles eggs in big chunks. This will make 2 medium balls of cheese (approximately 4-5" in diameter).Pour mixture into a colander that is lined with several thicknesses of cheesecloth. Once the mixture is drained, pick it up, cheesecloth and all, and shape into a ball by twisting the top of the cheesecloth. Tightly tie open end with string, placing string very close to the top of the ball. Be careful as this mixture will be very hot. Put this ball of cheese into a strainer over a pot to let it drain. Give the ball a twist now and then. When cool and done draining, remove cheesecloth and put into a quart size plastic bag; refrigerate.This cheese is served by slicing thin pieces.
