2 eggs plus 4 egg whites (you can use egg beaters but I find it's easier just to separate the egg for this recipe but you do waste a yolk.
SP&G (Salt, Pepper & Garlic) Use sea salt vs. table salt where you can
1/2 cup red onion or shallot or even scallions
1/2 cup red bell pepper
1/2 cup sliced mushrooms
6 oz uncured ham or canadian bacon (I prefer the canadian bacon - uncured is a must or you ruin your sodium intake plus it's no longer "clean" - Trader Joe's has a great one and it's low cost)
6 slices Jarlsberg lite swiss or any other reduced fat swiss cheese (hint - you can use a small amount of shredded cheddar cheese too, just use less)
1 package premade Whole Wheat pizza dough (Trader Joe's)



How Do I Make Ham and Cheese Egg Pockets?

Here is how you make Ham and Cheese Egg Pockets:

Preheat oven to 400Saute vegetables in tsp Olive Oil, or you can use spray, until soft and fragrant. While veggies are cooking whisk eggs together w/ salt, pepper & garlic, feel free to add fresh herbs at this time if you like. Cook eggs until fluffy, remove from heat and let cool. While eggs are cooling dust work surface w/ flour and prep dough. Knead dough into an approximate 6" tube. Slice tube into 6 separate pieces. Take each piece and roll out into a circle and place circle on foil lined baking sheet. To assemble:Take 1/2 piece of cheese (or a bit of the shredded) and place (or sprinkle) onto dough, then add a 1/3 cup of the egg mixture, then 1 oz of canadian bacon or ham and then the final bit of cheese. Fold the other side of the circle over to create a half moon shape and press and seal ends together. Continue on until all 6 are complete. You can lightly brush w/ an egg wash or olive oil if you wish but I don't and they still come out brown & perfect.
