5 oz 2% Velveeta Cheese, cubed

How Do I Make Mary's Mac and Cheese?

Here is how you make Mary's Mac and Cheese:

Boil the pasta as instructed on the package. In a large sauce pan, melt butter and olive oil over medium heat. Add chopped onion and cook until tender. Add enough flour to soak up the butter and oil. Cook for 2-3 minutes just to brown the flour. Add milk and stir frequently until boiling. Reduce heat to low and add Velveeta and cottage cheese. Continue stirring frequently about 5 minutes until cheese is melted. Pour over cooked pasta and transfer to a greased 9 x 13 inch pan. Bake at 350 degrees for 30 minutes or until the middle bubbles.
