Here is how you make HealthierLynn's Cheese Souffle:

Preheat oven to 350 degrees. Over low heat, melt butter and stir in flour. Add milk, slowly stir until it thickens. Add salt, pepper and mustard. Remove from heat. Immediately (and gently) add beaten egg yolks and cheese, Blend mix into beaten egg whites (beaten to stand in peaks). Pour into an ungreased 1-1/2 quart casserole dish.
