This is my all-time favorite mac and cheese recipe. It's been in my mama's family forever. I usually eat this as a main dish and add a green vegetable or salad to complete the meal.The traditional version is loaded in butter, milk and full-fat cheese. I've lightened it up by using whole wheat noodles, as well as lower fat and calorie ingredients. I also use cheese slices on top instead of shredded cheese, as it melts onto the top of the mac easier and more evenly. If you'd like less cheese on top, reduce number of slices or go for shredded cheese instead.

1 1/2 cups whole wheat elbow noodles
3 tbsp flour
3 tbsp Blue Bonnet Light Margarine
1 1/2 cups skim milk
1 cup Kraft 2% Shredded Sharp Cheddar Cheese
6 slices Kraft 2% Cheddar Cheese Slices
Salt and pepper to taste


How Do I Make Granny's Mac and Cheese?

Here is how you make Granny's Mac and Cheese:

Preheat oven to 350 degrees F and prepare a long casserole dish. Cook noodles according to package directions. Drain and set aside in the prepared baking dish.In a sauce pot, melt butter over medium heat and gradually add flour, mixing well. Cook mixture a few minutes to cook off some of the starchy taste but do not brown. Add milk, salt and pepper and whisk together vigorously to combine. Continue to cook over medium heat until milk starts to thicken. Remove from heat once milk is thick enough to just coat a spoon.Add shredded cheese and stir until all is melted. Pour cheese sauce over noodles and mix well. Bake for 20 minutes or until casserole starts bubbling. Take out of oven and top with the cheese slices. Continue to bake another 5-10 minutes or until cheese on top is melted and casserole is very bubbly.Remove from oven and serve warm.
