If you are making jelly no need to remove pits. For jam you do. Boil cherries with a quarter cup of water. Boil until all red color is gone from the cherries. Pour into a jelly strainer or cheesecloth until all liquid has stopped dripping. Put back on stove and add sugar, stevia and fruit pectin. Boil for a few minutes. I usually triple this.
