I only use half a small container) Land O Lakes light butter with canola oil, 6 tbsp cut into Milk, 1%, 1.5 cup 2-4T of flour Chicken Breast (cooked and shredded - this recipe is great for leftover chicken!),0.75 to 1 whole breast Bacon, pork, microwaved, 4 medium slices, cooked and crumbled How Do I Make Chicken Bacon Mac and Cheese?Here is how you make Chicken Bacon Mac and Cheese: Cook and shred chicken breast (this recipe is great for leftover chicken, which is what I use).Preheat oven to 350 degrees. Spray a baking dish (I use an 8x12 inch one by 9 x 13 would work fine too) with cooking spray or grease with light butter.Cook 8 oz of elbow macaroni as directed on box. Meanwhile, melt 4T of butter in a small sauce pan until melted. Whisk in flour and allow to cook until slightly browned (approx. 2-4 minutes). Whisk in 1/2 cup milk until flour is dissolved and mixture thickens. Stir in remaining milk 1/2 cup at a time making sure flour is completely dissolved and mixture thickens. After milk is combined, add cheese and whisk until melted completely. Salt and pepper to taste. (Note: cheese sauce can sit for a few minutes off the heat while pasta finishes, but do not wait too long or the sauce will thicken too much!)Drain pasta and mix in remaining 2T of butter and the shredded chicken. Add cheese sauce and mix together. (If you choose, you can add a little more shredded cheddar at this point, if you feel your sauce is too thin. It will melt in the oven. Just remember to add the additional calories to your recipe.)Pour mixture into baking dish and bake for 15 minutes. Allow to cool for a few minutes prior to serving. Meanwhile, using a microwave safe plate, layer 2 paper towels on plate. Lay bacon strips on paper towels (not touching) and add one paper towel on top. Microwave for 4-5 minutes until bacon is crispy.
