Put water and salt into a small saucepan. Start heating the water. Gradually add the cornmeal, stirring constantly. Continue cooking cornmeal over medium heat. you will need to stir often. Be careful because the mush can spaltter if an air bubble escapes to the top of the mixture.This will need to be cooked until it's a thick consistency. Until it doesn't readily fall off the spoon and needs to be spooned from the pan.Spoon mixture into a small bowl or pan that has been sprayed with cooking spray. Spread out evenly.Refrigerate at least until cool or overnight.Remove from bowl or pan. Slice 1/4-1/2" thick. The thinner the slice, the crispier it will be. I like my on the crispy side.Fry slices in hot butter.Serve with pancake syrup.
