1 Tbs. extra-virgin olive oil
3/4 Cup thinly sliced scallions
Kosher Salt
2 Heaping cups of corn
2 Tbs. fresh minced ginger
2 to 3 tbs. minced garlic
Scant 1 tsp. of minced serrano chile (if you can't find this at the grocery store, just substitute a hot pepper of some sort)
2 Tbs. Chopped fresh cilantro
1/2 lime
Freshly ground black pepper

Here is how you make Corn Saute with Ginger, Garlic and Cilantro:

Melt 1 tbs. of the butter with the olive oil in a 10-inch saute pan. Add the scallions and 1/2 tsp of salt and cook, stirring occasionally, until the scallions are soft and lightly browned, about 3 minutes.Add the remaining 1 tbs. of butter and the corn, ginger, garlic, serrano, and 1/2 tsp of salt. Cook, stirring frequently and scraping the bottom of the pan with a wooden spoon, until the corn is tender (3-4 min).Remove the pan from the heat, add all but about 1/2 tbs of the cilantro, a good squeeze of lime, and a few generous grinds of pepper. Stir and let sit for 2 min. Season to taste with more salt, pepper, or lime.
