Here is how you make Yellow Corn Grits Polenta:

Place uncooked grits into a saucepan and give it several rinses by covering with water, swirling gently, then carefully pouring off any husks or anything that floats to the top. After rinsing, add up to 3 cups of water, all the salt, and heat to boiling on medium high heat, stirring constantly. When it comes to a boil, lower the heat to medium low or just enough to keep it bubbling slowly. As it thickens, add more water until it has all been stirred in. Set the heat on low, just so it barely bubbles. Put on the pan cover to continue to thicken and get creamier in texture. Stir every 5 minutes or so. Spray a 9 x 13 pan with pan spray. Pour in the polenta mixture and tilt the pan to spread evenly. Lay a piece of plastic wrap directly on the surface of the polenta, to cool without forming a skin.
