1 can(15.5 oz) Hanover Black eye peas
1 can (11oz) green giant corn
1/4 tsp salt
1 tbsp olive oil
1/2 yellow onion chopped
1/2 green pepper, seeded and chopped
1/2 red pepper, seeded and chopped
1 tomato, seeded and diced
1 clove garlic
Zest and juice of 1 lime
1 tbsp of white wine vinegar
3 tbsp cilantro (or leave out if you prefer)
1/4 tsp freshly ground pepper


How Do I Make Black-Eyed Pea and Corn Salsa?

Here is how you make Black-Eyed Pea and Corn Salsa:

Drain and rinse the blackeye peas and the corn and set aside in a large bowl.In a large nonstick saute or frying pan, heat the olive oil over medium high heat. Add the onioin and bell peppers and saute until softened, about 3-4 minutes. Add the tomatoe, and garlic and saute until the tomato is softened.Toss the onion/peppers/garlic mixture into the bowl with the black eye peas and the corn, along with the lime zest and juice, vinegar, cilantro, and salt and pepper. Toss to mix. Sere immediately or cover and refrigerate up to 2 days.Also, if you plan to leave out the cilantro, you can add as much Zesty Italian sauce (to taste) to the mixture, and let it all marinate over night.
