While searching for a healthy cornbread recipe I stumbled on the "Good-for-you Cornbread" from NLB. After reading the recipe (GASP all that sugar and oil!) and some of the reviews I decided to try a redo. This may be a little firmer than many people like; however, my grandson and I both like it. I don't know about the rest of the family. They weren't home.

1 cup whole milk
2 Tbsp bacon grease (or oil of your choice)
1 cup frozen whole kernal yellow corn
2 Tbsp each: bell pepper, onion and celery (chopped)

Preheat oven to 400. Using your favorite skillet ( I prefer cast iron, as it is virtually non-stick if kept seasoned properly) saute the corn, peppers, onion and celery in the 2Tbsp bacon grease.Meanwhile, beat together with a fork the egg and milk until a uniform lemon color is reached.Add the flour, cornmeal and baking powder and mix well.Pour in the sauted vegetables, including the bacon grease, and stir to blend.Return mixture to the skillet and place in pre-heated oven for 20 to 25 minutes.Number of Servings: 10Recipe submitted by SparkPeople user LYNLIN1957.
