Here is how you make plain ol' cornbread:

I just eyeballed this when I made it the other day...not sure if the proportions are right or not, but it's close to the White Lily recipe (I used the self-rising cornmeal mix not the buttermilk one). Will update when I make it again and measure exactly. Mix all ingredients EXCEPT shortening in a bowl. Batter should be thick, but sloppy and just pourable. Add the shortening to a 10-inch cast iron skillet and place in an oven to preheat at 400 for 10 minutes. Remove pan and carefully pour cornbread batter into pan. Return to oven, bake for 15 to 20 minutes. Bread will still be pale on top when it is done but springy. Flip onto a plate and then return to skillet TOP DOWN to lightly brown the top (don't replace in oven, though). Recipe is calculated for 16 pieces (slice into 8 even pieces, then half each piece).
