Raise the heat and bring to a boil. Once the mixture is boiling, lower the heat again to as low as possible and cover. 4. In about 10 minutes most of the water will have been absorbed. Add 2 TBSP mint, the apricots, pistachios, and lime juice. Stir and cover again to cook for 5 minutes until water almost completely absorbed. 5. Remove the cinnamon stick, fluff couscous with a fork, garnish with remaining mint, and serve.
