1/4 cup Onions, chopped
1 whole Bay Leaf
4 tsp Madras Curry powder
1/2 tsp cayenne pepper
1/4 tsp Cinnamon
5 garlic cloves, mashed
15 grams Fresh Ginger, mashed
1 tsp Salt

5-10 tbls Cilantro, roughly chopped
3/4 cup Tomatoes, chopped
1 tbsp Fennel seed, ground
1 Star Anise ground


How Do I Make Lamb Curry Fiji Style?

Here is how you make Lamb Curry Fiji Style:

Put oil in medium size pot and cook over medium high heat. Add cumin, bay leaf and onion, cook until onion is tender.Stir in meat adding the curry powder, cayenne and cinnamon. Cover and let cook over medium heat (approximately 10 minutes).Mash ginger and garlic with mortar and stir into the meat. Stir in salt, tbsp water and cloves. Cover and cook for another 10 minutes.Dice tomatoes (about two fresh) and stir into the meat. Cover and continue cooking for about five minutes.Grind star anise and fennel and stir into the meat. Cover and continue cooking for about another 20 minutes, occasionally stirring the meat.
