I've been trying to find a recipe for creamy egg bites that does not require the use of a pressure pot. None of the baking methods I have found will freeze well. When you try to reheat them they come out spongey. Well after some thought and a little experiment I finally cracked the secret to creamy, moist egg bites. The trick is steaming them, not baking. You will still need silicone cupcake molds, not muffing trays.

0.5 cup (not packed) Cottage Cheese, Nonfat
0.125 cup Kraft 2% Shredded Cheddar Cheese
1 tsp Salt


How Do I Make Egg Bites Recipe Cracked?

Here is how you make Egg Bites Recipe Cracked:

1. Mix all of the ingredients (eggs, cottage cheese, cheddar, salt) in a blender until smooth2. With a large pot of water, fill it up to about 1 inch and bring to a light boil/simmer. You dont need a deep amount of water, but depending on how many egg bites you're making in one batch, you just need a wide based pot.3. Spray the silicone molds. You MUST use COOKING SPRAY. Trying to spread olive oil on the molds will mix with the egg batter. It will not stick together when you try to remove it from the cupcake mold. 4. If you're going to add other flavours to your egg bites such as ham and cheese or peppers, add those to the egg molds before the eggs. Check out the tips and tricks section to see some flavour combinations.5. Add any flavour ingredients you like to the bottom of each mold. Just enough to cover the bottom of the cup. 6. Add 2 TBSP of egg mix to each mold. You will want extra space for the eggs to rise. 7. Shred the cheddar cheese into a bowl. Once it is shredded use your fingers to sprinkle a light amount of cheese over the top of each egg cup. 8. Once the water is bowling, reduce to a simmer. 9. Using kitchen tongs, carefully place the egg molds into the pot to float and cover with the lid. 10. Allow to steam for 10 minutes.11. When the eggs have risen and have a puffy appearance, remove the molds from the pot and set to cool. 12. When the eggs have cooled, flip the molds over onto a paper towel allowing the eggs to fall out. I do not recommend trying to remove the eggs with a fork, spoon or tongs because they might split in half. 13. Place the eggs in ziplock bags- 2 egg bites per bag. I recommend using stickers to label each bag by flavour- ham & cheese, chili cheese, veggie or whatever flavour you made. Set them in the freezer until ready to eat.REHEATING. You can choose to freeze them if you want. When you are ready to serve, Remove the egg bites from the bag, set on a plate, cover with a paper towel and microwave for about 30-45 seconds.
