For as long as I can remember my Grandma always had Red Beet Eggs on her Easter dinner table along with the requisite ham, asparagus and Ukranian Paska. To this day, the first recipe I make for Easter dinner is Red Beet Eggs. (They're also really good for picnics!)

1 can Del Monte Sliced beets (14.5 oz. can), including the liquid
Water, added to beet juice to make 1-1/3 c liquid
1 tbsp. Agave Nectar
1/2 c thinly sliced raw onion
assorted spices: cinnamon, cloves, cardamom


How Do I Make Red Beet Eggs?

Here is how you make Red Beet Eggs:

Hard boil, cool and peel the eggs. Place them in a glass container with a lid. Combine remaining ingredients in a saucepan and bring to a boil for a few minutes. Adjust spices and sweetener if necessary. Pour red beet mixture over eggs in your jar or bowl, seal and refrigerate for at least 3 days, being sure to rotate the eggs around in the jar for total coverage and pickling. Serve in side dish, 1 egg and a few beet slices/onion per person.
