1 c. milk
1/2 red bell pepper, chopped
1/2 green bell pepper, chopped
3 scallions or green onions, chopped
4 slices bacon or 2 Pillar's Turkey Bites, chopped
1 tsp dried oregano
s & p to taste
1 c. grated light cheddar
1 oz. goat cheese (optional)

Here is how you make Frittata Roll Up:

Preheat oven to 350. Line a cookie sheet with parchment paper so the paper hangs over the edges (for handles). Beat eggs and egg whites with flour and milk. Add all remaining ingredients except cheeses. Bake for 10-14 minutes, until edges are just set.Sprinkle cheddar all over; spread goat cheese on one end of the egg only. Bake for another 2-3 minutes until cheese is melted. Remove from pan using the parchment paper as handles. Using the parchment paper as a guide, start at the end with the goat cheese and roll the frittata as tightly as you can. Cut into 2" slices and serve with salsa, or ketchup.
