In large pan, brown sausage, drain and set aside. Saute onion, peppers and tomatoes with salt and pepper, then mix in sausage. In large mixing bowl, combine eggs and 1/2 c water with mixer and add salt and pepper. Add cornbread mix to eggs and mix. Add egg and cornbread mixture to sausage and vegetables. Add cheese and mix thoroughly. Generously spray large muffin tins and fill each to 3/4 then bake for 25-30 minutes or until center springs back when touched. Let cool for about 20 minutes before removing from pan.
