Peel the shallots by trimming the stem end and slipping off the brown skin. trim the root end and make a small "x" in it. Arrange the shallots in a single layer in a glass or enameled baking dish.2. In a small sauce pan, melt the butter. When foamy, add the honey and salt. Mix thoroughly and pour over the shallots. Turn the shallots to coat them evently.3. Bake in a 400° oven for about 45 minutes, basting occasionally, until browned and thorougly tender when pierced with a toothpick or the point of a small, sharp knife.
