Continue whipping until whites form stiff peaks.*Blend egg yolk mixture for 2-3 minutes. It will be a lemony color - there may be some lumps, this is okay.*Fold the whites into the yolk in 3 additions. The first one loosens the yolk mixture and the other two are to add volume. Don't over stir.*Plop scoops of dough onto parchment paper - I used a large tablespoon. Leave a bit of space between them, they'll spread a little.Bake at 325 for 20-25 minutes or until golden brown.
