How Do I Make Grilled Flatbread?

Here is how you make Grilled Flatbread:

Place a saucepan of water on to boil. Warm one cup of water in the microwave for 30 seconds. Pour into a medium bowl. Add sugar, yeast and salt. Stir; gradually add two cups of Durum Atta flour, until the dough comes together into a nice less-than-sticky ball. Turn out onto a well-floured surface, and knead about another half cup of flour into it. In a GENTLY oiled bowl, place the dough; cover with plastic wrap (or, a clean shopping bag. What the hell, recycle.) Place dough in the oven, with the boiling water under, and off to the side of it. Close oven and allow to rise for about an hour.Punch down, and knead five or six times to re-ball the dough. Divide into four pieces. Re-roll into balls, and on a well-floured surface, roll out into flats. About 3/8" to 1/2" is good. Allow to rest for about ten minutes. Meanwhile, preheat the grill. When medium hot (or, about 350 if you have a thermometer in your grill) place the dough on the grill for two minutes and CLOSE THE GRILL COVER; flip and allow two minutes more. Repeat, rotating the bread 90 degrees, to make a nice cross-hatched pattern. Bread should puff up nicely to form the classic pita pocket. There you go. Done. Ta-dahhh. Eat.Cut each round in half.
