I made the baked version of these great vegies with steak on Christmas day. They are wonderful and versatile. Can be grilled or baked and use any combo of vegies desired. If made without potatos and with 6 C total of carrots, cauliflower and broccoli florets and red pepper, the calorie count is only 90 per serving. Cut up vegies into bite sized pieces in a large bowl. You should have 6 C of raw vegies. Mix together olive oil, lemon juice and seasonings in a small bowl. Drizzle over vegies. Put vegies in a grill rack or seal in a large piece of heavy duty foil. Grill over medium heat for 20-25 minutes or until fork tender, turning grill rack or packet once.These vegies can also be baked in a single layer on a cookie sheet at 400 for 25-30 minutes or until fork tender.Use whatever combos of vegies you like. I've used no potatos but added 2 C cauliflower florets, 1 C baby carrots, and 1 C red pepper.
