What Are The Ingredients For Homemade Bagels Recipe?The ingredients for Homemade Bagels are: 4c Bread Flour1 packet rapid rise yeast 1T salt 1T malt powder or syrup (not malted milk powder) OR 1T brown sugar 2T vital wheat gluten (optional - makes the bagels chewier) 1.5 c warm water (or enough to make a stiff but workable dough) How Do I Make Homemade Bagels?Here is how you make Homemade Bagels: Put warm water into the bowl of stand mixerAdd 1C flour, then malt/brown sugarAdd 1C flour, then saltAdd 1C flour, then glutanAdd 1/2C flourAttach dough hook and knead on low speed to bring ingredients together, adding more flour 1T at a time until a stiff dough forms. Knead for 8 minutes.Place dough in a warm, draft-free location in a bowl sprayed with cooking spray. Cover and let rise until doubled, about 1.5 hours.Gently deflate, cut into 5oz pieces. Form each piece into a bagel (roll into a ball, flatten the ball, then push through the center with your thumb and smooth out the shape). Let rise for at least 30 minutes.Preheat oven to 425 and prepare a baking sheet with a silpat or parchment.Bring a wide pot of water to a boil. Add 1T malt powder/syrup to the water. Lower each bagel into the water and let boil for about 1 minute on each side, then remove to a towel to dry before placing on baking sheet. (I use a deep frying pan that can hold about 4 at a time - the water doesn't have to be deep.)Bake bagels 22 minutes. Remove, and cool.I cut them in half and freeze them, then toss one in the toaster each morning.
