1/2 C honey
1/2 C brown sugar
1/2 C maple syrup (pure maple, not pancake syrup)
2 tbsp Vanilla Extract
3/4 tsp salt
1/2 tsp cinnamon
3/4 C peanut oil (veg oil will work too, not olive oil)
1.5 C chopped walnuts
5 C rolled oats

2 C raisins (or any dried fruit you like)
Fruit is added AFTER granola is done ... do NOT bake raisins in with granola, they will burn and ruin your food ... trust me, I know.

Here is how you make Finally Perfect Homemade Granola (1/4 C servings):

Put oven rack in middle of oven and set temp to 325 F. Line a rimmed baking sheet (12 x 18) with parchment paper.Whisk honey, brown sugar, maple syrup, vanilla, salt, and cinnamon together until very smooth. Get all of the lumps out of the sugar. Whisk in peanut oil. Fold in walnuts and oats. Blend very well, using your hands if necessary to be sure it is all coated.Transfer the mixture to the prepared baking sheet, and spread in a very thin layer (about 3/8 inch). Use a flat metal spatula (spray with Pam, it really helps) to press the mixture down flat and compact. The BETTER you press, the BETTER your granola! Bake until lightly browned, about 40 minutes, rotating pan halfway through baking. This will BURN easily, so check often.Remove granola from oven and cool in the baking sheet for at least an hour. Granola is very soft at this point, and any attempt to get it out of the pan will make a big mess. IF you want to cut this into bars, however, now is the time to do it. Use a blade and press straight down rather than cut with a knife.After granola is completely cool, break into bite sized pieces and put in zip top baggie. Add raisins, or whatever dried fruit you wish. Use on yogurt, in smoothies, etc. Nutritional info includes raisins.
