Once the dough is firm but pliable, transfer to a clean mixing bowl coated with two tablespoons of E.V.O.O. Turn the dough one time to coat both sides. Place bowl on the stove top that has the oven on(for best rising results, but a counter top is fine), and cover bowl with a dampened tea towel. Let rise for one hour. Punch dough down, and let rise an additional half an hour. Divide dough into balls and place on two lightly greased baking sheets. Cover with plastic wrap and let rise about twenty minutes.
