The ingredients for Hummus are:

-1 cup of canned chickpeas*, reserve some liquid
-1/2 cup of tahini
-3 cloves of garlic
-juice of 2 lemons (about 1/2 cup)
-3 TB of liquid from chickpeas (canned or cooked)
-1/4 to 1/2 tsp of salt

Garnish with the following if you like, but remember to account for the change in fat content if using oil:
-extra virgin olive oil
-paprika
-whole chickpeas

*You may always use cooked dried chickpeas (soak rinsed dried chickpeas overnight and bring to boil, then simmer for 2 hours. Skim off foam once boiling)

Here is how you make Hummus:

Blend garlic, lemon juice and chickpea water in a food processor. Add chickpeas, tahini and salt. If you are using canned chickpeas, use less salt as they usually have salt added. Otherwise start with a quarter teaspoon, taste, and add more if needed. Run until mixture forms a paste.
