Chop pepper, onion and mushroom and set asideUse ground Italian sausage or peel link and saute brownAdd butter and pepper, onion,and mushroom and saute until onion is clear (med heat) put in bowl and set asideBeat eggs with 1 tbs water and 1 tbs parmesan cheese until yellow and white well mixed.Rewarm the sautee pan and pour in the egg mixture.When eggs are set on the bottom, place the mixture evenly on 1/2 of the omelet. Keep heat at about mediumWhen the eggs are firm on the bottom and almost completly set, fold the omelet in half. Keep heating for about 2 minutes. Flip the omelet and heat other side about 2 minutes.
