Bring water and salt to a boil in a large pot. Gradually stir in grits. Reduce heat and simmer until mixture is very thick (about 30 minutes). Stir in buttery spread. Spoon into a large oiled bowl and let stand for 10 minutes. Invert onto a plate, mixture will hold it's shape. Cut polenta into thick slices and serve hot. Top with grated cheese if desired.
