Lay out a large sheet of heavy duty aluminum foil. Slice yellow squash and zuchini and place in the middle of the foil. Add sliced red potatoes and red onions if you choose to use them. Sprinkle generous amounts of lemon pepper over the top. Place pats of "butter" across the pile of veggies. Bring both ends up foil up to seal along the top and sides.
