4-1/8 tsp Cornstarch
6oz Greek Yogurt
3 tsp Dijon Mustard
1 packet (14g) Truvia
1/4 tsp Salt

Here is how you make Rocco's Magnificent Mayonnaise:

1. In a small saucepan wisk the vinegar and the cornstarch. Whisk 1/4 cup of the yogurt into the vinegar mixture. Cook the yogurt and vinegar mixture over high heat, whisking constantly, until mixture becomes very thick. Scrape thickend mixture into the bowl of a food processor.2. Blend the yogurt mixture for about 1 min. Turn off the food processor and scape down the sides of the bowl. Continue to blend the yogurt mixture until it is slightly cool and very smooth, about 3 more min. Add the remaining yogurt, mustard, Truvia, and salt to the mixture. Blend for another minute. Scrape down the sides of the bowl and blend for 30 more seconds.3. Pour the mayonnaise into a plastic container. Cover tightly and place in the refrigerator until it is cold and firm, about 2 hours.
