sun dried tomatoes
1/2 8oz. package of feta cheese
grape tomatoes, about 4oz or 1/2 a package
olive oil (I said 1/4 of a cup, but that is approximate, you want the pasta to be moist and not sticky)
balsamic vinegar (it only let me put in tbsp. - but you want about the same amount as vinegar as oil)
clove or 2 of garlic
Italian seasoning
kosher salt
I also use a couple shakes of Garlic, Garlic from Tastefully simple

Here is how you make Mediterranean orzo:

Chop yellow (or orange or red) pepperchop sun dried tomatoesCook orzo according to package directionsDrain and run cool water over the orzoOnce drained, put orzo in a medium size bowlAdd some olive oil, a pinch of kosher salt, the garlic, some balsamic vinegar and a few shakes of Italian seasoning. (I usually add the olive oil and vinegar a bit at a time).Stir to coat pasta and then add peppers, sun dried tomatoes, whole grape tomatoes and feta cheese. Add more oil, vinegar and Italian seasoning and stir.Cover and refridgerate. I prefer to make it a day ahead to let the flavors really meld together. But, at least 4 hours is good. You may need to add more oil and vinegar after it sets for awhile. Stir through again. Serving Size:?Around 8
