2 1/2 tsp. baking powder

1/4 tsp. buttermilk
2 egg whites
2 tbsp. cooking oil
3/4 c. shredded, peeled apple

Here is how you make Apple and Oat Bran Muffins:

In a medium bowl stir together flour, oat bran, brown sugar, baking powder, baking soda, salt, nutmeg and cinnamon; set aside. In a small bowl combine buttermilk, egg whites and oil. Add to dry ingredients; stir just until moistened. Stir in shredded apple. Batter may be stored, tightly covered, in the refrigerator for up to 5 days. To bake, spray muffin cups with non-stick spray coating. Spoon out about 1/4 cup batter into each cup. Bake at 375 degrees for 18-20 minutes or until toothpick inserted in center comes out clean.
