1/3 C PB peanut butter powder
1 egg + 1 egg white
2 teaspoon vanilla (or more to taste)
3 tablespoon almond meal
1 teaspoon baking soda
pinch of salt
1/3 cup + 1 tablespoon mini semi-sweet chocolate chips

Here is how you make White Bean Peanut Butter Muffins:

1. Preheat oven 350 F2. In a large food processor (A blender would work as well) puree the drained and rinsed beans until smooth.3. Add the applesauce, sugar blend, peanut butter, egg, and vanilla and blend well.4. Add the almond meal, peanut butter, baking soda and salt; once again blend until smooth.5. Stir in the 1/3 cup of mini chocolate chips.6. Line your mini muffins pan and evenly divide the batter. I got 39 mini muffins. If you don't use liners, grease well or your cupcakes might stick and tear apart when you remove them. (I use parchment cups and they peeled off easily. 7. Sprinkle the tops of the muffins with the reserved tablespoon of mini chocolate chips. (I skipped this addition)8. Bake for 20 minutes or until a toothpick come out clean.9. Allow to cool before removing from pan.Serving Size:?makes 12 nice size muffins.
