These are a special treat that we make for birthday mornings. I make a pyramid of muffins on a plate, stick a candle in the top one, and we all sing Happy Birthday to the birthday child before breakfast. The original recipe for French Breakfast Puffs is in the Better Homes & Garden Cookbook. I've modified the recipe for two reasons: As originally written, the 12 muffins it takes are a bit. . . . short. Made this way, it makes 12 nice full breakfast puffs, as well as 1 a bit larger, that I make in a custard cup for the birthday boy - It's the top of the pyramid!Also, using 1/2 cup applesauce instead of butter saves 56 calories, 7 grams of fat, including 4.7 grams of saturated fat, and 19 mg of cholosterol PER MUFFIN!

2 cups unbleached white flour
2/3 cup sugar
2 tsp Baking Powder
1/2 tsp nutmeg
1/2 tsp salt (I use Kosher)

1 egg
1 egg white
3/4 cup milk
1/2 cup applesauce

4 T butter, melted
1/2 cup sugar
1 T cinnamon


How Do I Make Birthday Muffins! (AKA French Breakfast Puffs)?

Here is how you make Birthday Muffins! (AKA French Breakfast Puffs):

Combine first 5 dry ingredients in a bowl. Whisk thouroughly and then make a well in the center.In another bowl combine the next four (wet) ingredients, and beat with a fork or whisk. Stir wet ingredients into dry ingredients, stirring just until combined. Pour into muffin pans - batter should be about 1/4 inch below the top of the pan.Bake in a 350 degree oven for 25-30 minutes, or until light golden brown. While baking, melt butter and mix cinnamon and sugar in a seperate small bowl.Remove puffs from muffin pan. One at a time, poke a fork in the bottom, and then dip the top of each muffin first into the butter (make sure to let the excess driop off) and then swirl into the cinnamon and suage mixture. Remove muffin from fork and place on serving platter. Repeat until all muffins have been dipped.Please note that you shouldn't use all of the butter - the nutritional information is based on 3 Tablespoons of butter, not the 4 called for in the recipe - but you need to melt a bit extra to make the butter deep enough to dip the tops of all the puffs.Serving Size:?Makes 13 breakfast puffs
