Makes 6 servings.These are easy on the go breakfasts for people who don't have time to cook every morning. This is the basic recipe but feel free to add/substitute for any of the ingredients. Bacon or sausage works in this too but you have to pre-cook them before baking. 1) Preheat oven to 350.2) Chop the onion, pepper and mushrooms into small pieces. 3) Whisk the eggs and milk as you would to make scrambled eggs until slightly frothy.4) Add onion, pepper, mushrooms and cheese to egg mixture. 5) Pour mixture into muffin pan (makes 6) and bake in oven for 15 minutes or until a toothpick inserted comes out clean.I usually make these on a Sunday and then wrap them individually for breakfast on the go.
