Makes 18-24 muffins. Nutrition info is calculated on 18 muffins. These are low in fat and loaded with nutrient dense fruits. I use half whole wheat flour for extra nutrition also. I cut the oil in half from the origional recipe (was 1 cup) and you can't even tell the difference! Actually I think these are better--not at greasy. I also cut out 1/4 cup of sugar as the fruit adds sugar too. You could use sugar sub and egg beaters to cut out even more calories. Add fruit, carrots and nuts. Whisk together oil, eggs and vanilla. Add to dry ingredients. Stir to blend well. Pour into muffin tins that have been sprayed with nonstick spray (like Pam). Bake in preheated oven at 350 degrees for ~20 minutes--until toothpick inserted into the center comes out clean. Cool in pan 5 min; then turn out onto rack to cool.
