Here is how you make Quiche Muffins:

Microwave the bacon on high on a paper towel lined plate for 3 minutes to cook. Mix together flour, baking soda, salt and pepper in a medium bowl. In a separate bowl, mix eggs, milk, yogurt, and oil. Gently stir the wet into the dry mix. Fold in bacon, cheese, and chopped scallions. Scoop into a muffin tin and bake at 350° for 16-18 minutes.
