How Do I Make Onion Chapatis?

Here is how you make Onion Chapatis:

I like my onions caramelized first:Spray a small skillet with EVOO. Cut the onions in half, then slice thinly, and cut in half again - making 1/4 rounds. Sautee over medium lo heat until they are sweetened, browned and beginning to dry.Or, you can cut the onions the same way and just use them raw.Mix flour and all spices in a medium bowl. Add cilantro and onions and toss to coat them well with flour.Start pouring in a small amount of water while stirring. Stop when the dough is wet enough to hold together and knead.Knead the dough for a couple fo minutes, then cover with a towel and rest 10 minutes, or longer if you need to.Divide into 6 pieces, roll each one out thinly. Heat a medium, heavy skillet to med/hot. Spray with EVOO. Cook chapatis one at a time in the skillet. About 1-2 minutes on the first side, then flip when golden.For the second side, cook about 45 seconds, then begin to press very firmly on the chapatis with a wadded up paper towel. This should cause the chapatis to puff!
