Here is how you make Caramelized French Onion and Portabella Risotto:

Makes 10 - 1/2 Cup ServingsHeat a large skillet on med-high heat over stovetop. Saute' rice in butter and olive oil for 1-2 minutes. Add the mushrooms and saute' until the mushrooms begin to release their moisture. Slowly begin to add the beef broth and onion soup 1 cup at a time. After each cup is added continuely stir the rice until the liquid has been absorbed. Then add another cup and stir until liquid is absorbed. Repeat until all the broth and soup have been added.
