Here is how you make Quick Pickeled Onions:

Place cut and separated onion moons in a bowl. Place vinegar, salt and Sugar in small sauce pan and, over low heat, bring to a simmer. Simmer until sugar and salt are dissolved. Pour over onions and stir. Allow to sit on counter for at least 1 hour, stirring about every 20 minutes or so. Transfer to a jar with lid that fits tightly and refrigerate. Use on sandwiches and wraps, or in salads if you like. About an 1/8 of a cup per serving.
