Mix dry ingredients in a bowl with the sugar. Make a well in the dry ingredients and crack the egg into it. Beat the egg until light in color (careful not to scrape up the dry ingredients into the egg yet) then add the milk and oil into the well. Mix all the ingredients together, using a scooping motion to get the dry ingredients off the sides and bottom of the bowl only until you can no longer see dry mixture. The batter should still be lumpy. Swirl the canola oil around the bottom of the skillet to be sure to coat the surface that the pancake might touch. Then use a paper towel to wipe out excess canola oil out of the pan. Fry 1/4 cup of batter at a time. --- You know the first side is done when the bubbles stop moving and the edges are slightly dry.
