Sort through black-eyed peas to remove any small stones or debris. Put them in a 5-quart Crockpot.Cut the meat off the ham hock and dice it. Add meat and bone to Crockpot.Peel and dice onion. Peel and mince garlic. Add to Crockpot.Fill the Crockpot to about an inch or half-inch below the rim with water. Turn the Crockpot on low and go do whatever you do on New Year's Eve. Let this cook all night on low. It'll be perfect in the morning or at lunch. NOTE: I don't add salt because my butcher adds a fair amount of seasoning before he smokes the ham hocks. You'll want to season to taste. If you add salt, wait until the beans have softened to do so.I figure this should make 20-25 100-gram servings.
