This is my favorite pesto recipe. It has a fresh clean flavor not weighed down by a lot of fat. Make your own pesto flavor by changing the herb or nut. You can substitute other herbs for all or part of the basil: parsley, arugula, cilantro, sorrel, oregano, tarragon, sage, kale and spinach. Or switch out the nuts for another type: pistachios, pine nuts, pecans, hazelnuts, almonds, pumpkin seeds, or squash seeds.

4 cups packed, fresh basil leaves
2 garlic cloves, peeled
3 tablespoons fresh lemon juice
3/4 cup olive oil


How Do I Make Simply Pesto?

Here is how you make Simply Pesto:

Heat the walnuts in a dry skillet on high, shaking the skillet continuously until the walnuts are browned. Using your metal blade of your food processor, grind the walnuts to a fine meal. Add the basil, garlic, and lemon juice. Slowly pour in the oil and process until the mixture is smooth. To store in the refrigerator, cover it with olive oil and seal it tightly. It will last up to 2 weeks. To store in the freezer, spoon into an ice cube tray and freeze.
