2 T olive oil
1/4 c onions minced( use red ,green or spanish)
2 cloves garlic minced
3/4 cip orzo pasta
3/4 c long grain white rice
3 1/2 c low soduim /low fat chicken broth Heated to a boil
1/4 t ground black pepper
1/2 c grated carrots
1 small zuchini cut into fine julinne then cut into 1/2 " bits
1/3 c spinich chiffonade
2 T basil chiffonade
2 T chopped fresh organo or sub 1t dried
1/3 cup feta cheese finely crumbled
3 T toasted pinenuts



How Do I Make Summer Pilaf?

Here is how you make Summer Pilaf:

In an oven save 2 quart casserole saute onion garlic until translucent Add uncooked orzo and saute 2 minutes stirring constantlyAdd uncooked rice and cook 2 more minutes stiring so that all the rice and pasta is coated with oil and toasted Carefully pour hot broth into pot season with pepper. When mixture boils ,cover pot and move to a 350 degree oven and cook for 45 minutes, or until rice and orzo are cooked through. Remove from oven and stir in vegetables and herbs. return cover and let sit off heat 10 minutes to cook vegetables Just before serving add feta and pine nuts.Serving Size: makes 6 side dish servingsNumber of Servings: 6Recipe submitted by SparkPeople user KARENCRAFTER.
