1tbsp virgin olive oil
1/2lg yellow onion, finely diced
pinch salt
1/2tsp ground cumin
12tsp curry powder
2 medium portobello mushrooms, diced
1 1/2c fat free chicken broth
2tbsp tomato paste
1c coarse bulgur
1 15oz can garbanzo beans
1/2 frozen peas and carrots


How Do I Make Bulgur Portobello Pilaf?

Here is how you make Bulgur Portobello Pilaf:

Heat oil in saucepan on medium heat. Add onion, stir to coat. Cook 5min. Add spices and mushrooms, reduce heat, and cook covered, 5min. Add 1tbsp broth if the mixture becomes too dry.Raise heat to high, add broth and tomato paste. Stir until paste dissolves and mixture boils. Stir in the rest of the ingredients. Turn off heat and cover. Let stand 15min, until liquid is absorbed and bulgur is soft.I don't add peas and carrots to this recipe normally, as the flavors are strong enough without it, but if you want the extra vegetables go for it!
