Add onion, stir to coat. Cook 5min. Add spices and mushrooms, reduce heat, and cook covered, 5min. Add 1tbsp broth if the mixture becomes too dry.Raise heat to high, add broth and tomato paste. Stir until paste dissolves and mixture boils. Stir in the rest of the ingredients. Turn off heat and cover. Let stand 15min, until liquid is absorbed and bulgur is soft.I don't add peas and carrots to this recipe normally, as the flavors are strong enough without it, but if you want the extra vegetables go for it! Also microwaves very well for leftovers, and can be easily made vegan with vegetable broth instead of chicken.
