Cut potatoes into medium sized chunks Cut green peppers and onion into slices Place potatoes into large baggie. Pour olive oil and spices into bag. Shake and coat all vegies with oil and spices. Place in a crockpot and bake on high about 2 hours or until potatoes are tender. If you like a little crunch you can place the mixture into a baking dish and broil just before serving.
